Easy Condiments 4
From Food Network magazine:  This series focuses on:
·                  ketchups
·                  mustards
·                  salsas
·                  sauces
·                  marmalades, chutneys, relishes, spreads and a slaw
·                  mayos




THIS IS PART 4 ON CONDIMENTS



Scallion Bacon Ketchup


·        Cook 4 slices diced bacon until crisp


·        Drain on paper towels (we use microwave cooker so don’t have to drain)


·        Reserve the drippings


·        Mix ¾ cup ketchup


·        ¼ cup chopped scallions (including green tops)


·        Broken up pieces of bacon

·        1 TBSN EACH bacon drippings

·        And Worcestershire sauce

Peach-Thyme Mustard

·        Mix ½ cup peach preserves

·        1 TBSN each whole grain

·        And Dijon mustard

·        1 TSP lemon juice

·        ½ TSP fresh thyme

·        And a pinch of salt

Spicy Beer BBQ Sauce 

·        Combine a 12 oz. bottle of beer

·        1 cup BBQ sauce

·        1 seeded habanero chile (very hot – use gloves)

·        ¼ cup chopped pickled jalapenos

·        1 TSBP chipotle chile powder

·        & 1 clove garlic in a saucepan

·        Simmer until thick, stirring

·        30 minutes

·        Remove the garlic and chile



Bacon Onion Relish

·        Cook 3 slices diced bacon until crisp

·        Remove and reserve

·        Add 2 sliced onions to the pan (or use green onion slices when in season) (or use sliced red onions for more color)

·        Season with pepper (skip salt – bacon is salty)

·        Cook over low heat, covered, 10 minutes

·        Uncover and cook until golden, 30 more minutes

·        Stir in 2 TBSN chopped fresh parsley

·        And the bacon



Chili-Cheese Mayo

·        Mix ¼ cup EACH mayo

·        Grated cheddar

·        Canned drained chopped green chiles

·        And chopped scallions



Carrot-Chile Slaw

·        Mix ½ LB grated carrots

·        ¼ cup EACH sweet Thai chile sauce

·        Fresh lime juice

·        & chopped fresh cilantro

·        Add 2 TBSN fish sauce (Don’t have fish sauce? Try mixing hoisin or miso into low-sodium soy sauce or just use lite soy sauce)

·        And 2 chopped scallions
