 Gricia is a sauce made with guanciale (Guanciale is an Italian cured meat product prepared from pork jowl or cheeks. Its name is derived from guancia, Italian for cheek) pecorino romano, and black pepper


Neither of these recipes have mushrooms like the blogger and her friend ate!  But you could add them!!



Comment from another blog:  If you do use marinate the pork chops in wine, add some juniper berries, bay leaf, whole peppercorns, and dried thyme -- it will really help.
