Ketchups
Spicy Peanut Ketchup
- Mix 1/4 cup ketsup
- 1/3 cup peanut butter
- juice of one line
- 1 TBSN harissa or other chile paste
- and 1/4 TSP each
- coriander
- smoked paprika
- cinnamon
- cayenne
Bloody Mary Ketchup
- Mix 3/4 cup ketchup
- 1/4 cup horseradish
- 2 TSP hot sauce
- 1 TSP celery salt
- 1/2 TSP Worcestershire sauce
- Mix 2 TBSN stout beer
- 1/4 cup each
- whole grain mustard
- Dijon mustard
- 1/2 minced small shallot
- 2 TSP brown sugar
Stout Mustard
Apple Fennel Mustard
- Mix 1/2 cup Dison mustard
- 1 grated peeled apple
- 1 minced shallot
- 2 TBSN brown sugar
Salsas
Pico de Gallo
- Mix 3 chopped tomatoes
- 1 diced seeded jalapeno
- 1 diced red onion
- 2 TBSN chopped cilantro
- 1/2 tsp ground cumin
- Salt to taste
Pineapple Salsa
- Make Pico de Gallo (directly above)
- Add 1 cup diced pineapple
- 2 extra TBSN chopped cilantro
- 1/4 tsp ground allspice
- pinch of sugar
Sauces
Root beer barbecue sauce
- Combine 1 12 ox blottle of beer
- 1/2 cup ketchup
- 1/4 each lemon juice and orange juice
- 2 TBSN each
- barbecue sauce
- brown sugar
- Worcestershire sauce
- 1 TBSN molasses
- 1/2 tsp ground ginger
- in a saucepan.
- Simmer until thick, stirring 45 min.
Cajun Barbecue Sauce
- Combine 1 cup barbecue sauce
- 1/4 cup bourbon
- 2 TSP Cajun seasoning in a saucepan.
- Simmer until slightly thick, stirring occasionally
- 30 minutes
Marmalade
Red Onion Marmalade
- Cook 2 thinly sliced large red onions in a skillet with
- 1/4 cup olive oil
- over low heat, covered until golden
- 30 minutes
- Stir in 3 TBSN brown sugar
- 1 TSP grated peeled ginger
- Season with salt
- Cook until thick
- 20 minutes
Relish
Olive Relish
- Cooked 2 chopped onions
- in a skillet with 2 TBSN olive oil
- 1/2 TSP salt over low heat, covered, 10 minutes
- Uncover & cook until golden, 30 more minutes
- Add 1 minced garlic clove
- 1 TBSN tomato paste
- 1/2 pitted kalamata olives
- 1/4 cup white wine
- Cook 10 more minutes
Mayos
Ancho Mayo
- Toast 2 seeded dried ancho chiles in a skillet, 1 minute
- Soak in 1/2 cup water until soft, 20 minutes
- Puree the chiles and liquid with
- 2 TBSN toasted almonds
- juice of 1 orange
- 1 TBSN honey
- 3 TBSN mayonnaise until smooth
Thai Curry Mayo
- Mix 1/2 cup mayo
- 1 TBSN ketchup
- 2 tsp red curry paste
- 1/2 tsp fish sauce
- and juice of one lime
- Season with salt
