Wild boar sausage served with panini and antipasti.
***** Serve with Chianti classico or sangiovese.
BISCOTTI:
Cantucci (a homemade regional type of almond biscotti)
***** Serve with a glass of Vin Santo (local digestive liqueur) at end of any hearty meal.

PAPPARDELLE:
BISTECCA ALL FIORENTINA:
ANTIPASTI:
(1) antipasto toscano (also called “toscano miso”) (see antipasto miso below)
(2) crostini di fegato (a sauce of chicken livers, butter,
anchovies, onion, capers & broth which you spread on warm or toasted Tuscan
bread)
(3) antipasto miso (cold cuts from area, crostini and Pecorino Toscano cheese)
***** Serve with chianti classico, chianti rufina (ruffino) or Prosecco.
PAPPARDELLE:
(1) pappardelle sulla Lepre (hare)
(2) pappardelle al pomodoro (tomato)
(3) pappardelle al Ragu Di Cinghiale (pappardelle al sugo di cinghiale) (wild boar)

BISTECCA ALL FIORENTINA:
(most typical – T-bone or Porterhouse (local beef) cooked on
charcoal grill seasoned with salt & pepper and olive oil AFTER removed from
grill)

Tuscan spice
Bought a Tuscan spice mix last month at a very popular store in Greensboro, NC. I have been reading books on Tuscan food (several). Haven't been there yet but to my credit I have close to 300 spice and herb mixes to use with international food and over 450 paper cookbooks. I hope this gives me some credibility. This particular Tuscan food spice had caraway seed in it and I have found NOWHERE are there any caraway seeds in any Tuscan food!! McCormick has one and it has rosemary, oregano, basil and other more familiar Tuscan ingredients. Incidentally, I would like to meet the person or team who put caraway seeds in it!!
