INTERNATIONAL: HERS AND SPICES 29: Grains of Paradise and Recipes


Grains of paradise, which also go by unique names like guinea grains, guinea pepper, and alligator pepper, are tiny seeds that pack a punch have the power to titillate your taste buds with exotic flavor.  From West Africa. 

Quote 1:  The spice flavor was pleasantly tempered, ripe with flavors reminiscent of jasmine, hazelnut, butter and citrus, and with the kind of oiliness you get from nuts. They were entirely different from black peppercorns and in my mind, incomparably better."

 Quote 2:  It seems like combination of black pepper, cardamom, lemon zest, and something warm and woodsy that reminded me of walking through the forest on a summer afternoon.

The Piri Piri according to Wiki It is a small member of the Capisium genus (pepper). It grows in Angola, Uganda, Malawi, South Africa, Ghana, Nigeria, Zambia, Zimbabwe, Mozambique, the tropical forests of South Sudan and the higghlands of Ethiopa. It was brought to Goa, India by the Portuguese.

Despite being relatively restricted to an Atlantic sustenance, Portuguese cuisine has many Mediterranean (Italian, Levanatine, Maghrebi, Ottoman, Provencal French and Spanish cuisinesinfluences. Portuguese cuisine is famous for seafood. The influence of Portugal's former colonial (LINK TO PORTUGAL'S FORMER SUPER POWER POSSESSIONS where Portuguese food can be found)--> LINK<-- is also notable, especially in the wide variety of spices used. These spices include piri-piri (small, fiery chili peppers) and black pepper, as well as cinnamon, vanilla and saffron. Olive oil is one of the bases of Portuguese cuisine, which is used both for cooking and flavouring meals. Garlic is widely used, as are herbs, such as bay leaf and parsley.
