INTERNATIONAL: HERS AND SPICES 29: Grains of Paradise and Recipes

Grains of paradise, which also go by unique names like guinea grains, guinea pepper, and alligator pepper, are tiny seeds that pack a punch have the power to titillate your taste buds with exotic flavor.  From West Africa. 

Quote 1:  The spice flavor was pleasantly tempered, ripe with flavors reminiscent of jasmine, hazelnut, butter and citrus, and with the kind of oiliness you get from nuts. They were entirely different from black peppercorns and in my mind, incomparably better."
