INTERNATIONAL: BORDERLESS CUISINE 3 - Catalonia's and Roussillon's Influence on the cuisine of Andorra

This Borderless Cuisine article covers the cuisine of Andorra, Catalonia and an old region called Roussillon which was part of Catalonia (called Northern Catalonia) but later in history it became part of France.  It was first called Roussillon, then Lanquedoc-Roussillon and since the recent change in French mapping it is not called Pyrenees-Orientale (Midi-Pyrenees and Roussillon-Languedoc).

The map below shows the Midi-Pyrenees area of France.  All of the dark pink is the Midi-Pyrenees aka Pyrenees-Orientale. The bottom number (66) in dark pink is old Roussillon and the little dot to the left of it is Andorra. (Note: This area was called Septimania centuries ago; this area was captured by the Moors from Africa but then the Moors were chased out; had an influence on the cuisine of this area.)


 Andorra is a small country in-between old Roussillon (Pyrenees-Orientale) (old Northern Catalonia) and Catalonia, Spain.  See maps below.


Andorran cuisine is a mixture of Spanish Catalan cuisine and the cuisine of Southern France.  (NOTE:  Catalonia has been trying for years to become independent of Spain but to no avail.)  It is a European cuisine which is adapted to mountainous cuisine with high quality ingredients. 

As with many cuisines Andorran cuisine is seasonal.  For example, in autumn game such as wild boar and & hare and mushrooms play a major part.  A sauce for stewed or grilled game is a white sponge mushroom sauce with chile peppers and saffron.  Meat dishes, made on a grill or stewed on open fire, are served with Catalan garlic sauce aioli *.  Mushrooms are also served with mashed potatoes and special sauces.  Hare and wild boar are also stewed in red wine are popular and are served with vegetables and wild mushrooms. 

Where did garlic sauce, aioli or garlic mayonnaise come from? It originated in Egypt and was introduced to Spain and France by the Romans.)  Classic Catalan all-i-oli is used on fish, meat, vegetables & salads and is made without egg yolks and with garlic, olive oil, lemon juice or wine vinegar. Two other versions ajolio and ajiaccite are made with the same ingredients but use eggs.  



For Halloween, they make a dough out of sweet potatoes, almonds and cedar nuts which is baked and then served with fruit, nuts and chestnuts and served with a white Muscat wine. 

In winter they eat hot veggie dishes such as cabbage or beets.  

In Andorra, Roussillon and Catalonia the cabbage dish is called Trinxat.

Popular in Andorra and Catalonia and Roussillon aka Northern Catalonia is a dish called escudella (stew) in Catalonia and Andorra and ouillade in Roussillon.  There are several types of escudella but I have chosen the one with beans!!

All three countries make their own version of Catalan Cream, a dessert. In France it is called Creme Brulee.

From Wiki:  A tapa (Spanish pronunciation: {ta pa}) is an appetizer or snack in Spanish cuisine. It may be cold (such as mixed olives and cheese) or hot (such as chopitos, which are battered, fried baby squid). In select bars in Spain, tapas have evolved into an entire, sophisticated cuisine. In Spain, patrons of tapas can order many different tapas and combine them to make a full meal. In some Central American countries, such snacks are known as bocas. In parts of Mexico, similar dishes are called botanas

INTERNATIONAL: SPAIN: Catalonia 11 - Vinaigretta





This Sauce is typical of the Catalonia Region in Northeastern Spain.  "Vinaigretta" Sauce is an emulsified sauce in which main ingredients are Garlic, Olive Oil and Vinegar (although sometimes it takes into account Lemon Juice instead) but Sour Cream, Mayonnaise or Yogurt can be used instead of Oil. It is often used as an accompaniment to  Vegetables, Grilled Meats or Fishes and also as a Salad dressing.


                


Vinaigretta 
Spanish vinaigrette/Vinaigretta is made by mixing vinegar, olive oil, onions and herbs.
Sometimes capers or sardines are added for a bit of extra flavor.


INTERNATIONAL: SPAIN: Catalonia 10 PESCADORA SAUCE or SALSA MARINERA

Marinera aka Pescadora

This marine sauce (not to be confused with Italian marinara sauce which has a tomator base) is based on fish stock and includes white wine, onions and touch of parsley.

You might also see this sauce called pescadora. It is part of many soups and stews in the Spanish kitchen, such as:

INTERNATIONAL: SPAIN: Catalonian Sauces 9 - Salsa Espangola or Sauce Espanola or Basic Brown Sauce

There have been many healthy debates as to who invented this sauce. France (espanole) and Spain (espanola) both claim to be the creators of this sauce. 

 NOTE:  There is a little tidbit about Katherine (from Aragon near Madrid, Spain), obscure but nevertheless germane.  According to one professional culinary text, upon marrying Henry VIII of England her retinue included a team of chefs.  These Spanish chefs introduced what we now call a Brown sauce or Espagnole sauce.

Since the French were prone to adopting dishes from other countries and calling them their own (from the research I have done) it is believed Henry VIII (when visiting France at the The Field of the Cloth of Gold (FrenchCamp du Drap d'Or) was a site in Balinghem – between Ardres in France and Guînes in the then-English Pale of Calais – that hosted a summit from 7 to 24 June 1520, between King Henry VIII of England and King Francis I of France.)
introduced the sauce created by the Spanish chefs to France.




This healthy sauce is commonly used to accompany meat dishes in Spain. Do not hesitate to try it yourself at home, but note that its flavor may be really strong. It is similar to some gravies served in other European countries, but this is a traditional recipe to prepare this Spanish-style sauce: (I have included two versions.)

A RECIPE
To make Brown sauce, roux, vegetables, herbs, and some form of tomato product, are added to a batch of beef or veal stock and simmered until reduced.  Recipes vary on the use of additional ingredients, the ratio of the ingredients, and the cooking time.
INGREDIENTS
2 oz. butter
2 oz. all-purpose flour
2 quarts stock from above recipe (or canned or packaged low sodium beef stock)
4 oz. tomato puree
1 small carrot, roughly chopped
1 celery stick, roughly chopped
1 small onion, roughly chopped
1 sachet d’epices

DIRECTIONS

Melt the butter over medium heat in a small stockpot.  Add the flour and cook, stirring frequently until a golden color is achieved.  Slowly add the stock, constantly whisking until it is incorporated.  Add remaining ingredients.  Bring the sauce to a gentle simmer and cook for at least one hour, skimming the surface as necessary.  Strain through cheesecloth when finished.  Some chefs sauté the vegetables in the butter and then add the flour, or cook them separately in oil as opposed to adding them raw.

INTERNATIONAL: SPAIN: Catalonia: Sauces 2: All-i-oli, Allioli - Alioli - Aioli - recipes, gifs,video and more!




Allioli or All-i-oli la catalana

True Catalan Allioli is a thick sauce made of garlic and olive oil, used with grilled meats or vegetables, and some other dishes. Allioli means garlic (all) and (i) oil (oli) in Catalan.  NO EGGS.  

Another definition and recipe is made with garlic, olive oil, egg yolk and a touch lemon juice which makes this extraordinarily popular sauce called alioli. Simple to make, alioli is delicious on everything from potatoes to fish and even vegetables.

The non-Catalan or French Alioli and aioli is a simple sauce made from olive oil, egg yolks and lots of garlic! If you’ve ever made home-made mayonnaise, it might look familiar… because it is creamy mayonnaise with plenty of garlic added!
